Karela Fry and Tadka Raita Recipe / करेला फ्राई and तड़का रायता रेसिपी

Karela (Bitter gourd) is very nutritious vegetables. And making with different style will encourage everyone to eat bitter gourd. This recipe can be stored for a week in fridge and can be used in traveling.

About the Recipe

Karela (Bitter gourd) is very nutritious vegetables. And making with different style will encourage everyone to eat bitter gourd. This recipe can be stored for a week in fridge and can be used in traveling. 

Ingredients

  • 4 bitter gours (Karela)
  • 1 onion
  • 1/2 tsp cumin seeds, 1/2 tsp salt
  • 1/2 tsp turmeric powder, 1/2 tsp red chili powder, 
  • 1/4 tsp cumin powder, 2 tsp coriander powder, 1/2 tsp fennel powder
  • 1/2 tsp dry mango powder
  • 2 tbsp oil
  • 2 cup curd, 1/2 cup plain boondi, 1/4 tsp white salt, 1/4 tsp black salt
  • For tadka – 1/2 tsp oil, 1/4 tsp mustard seeds and pinch of red chili powder

Stepwise Directions

Step 1- wash karela and cut them into circles. Cut onion into small pieces.

Step 2 – Take a pan and add 2 tbsp cooking oil. When oil is hot, add 1/2 tsp cumin seeds then add chopped karela and stir to coat with oil. Now add some seasoning- little salt and pinch of turmeric. After adding seasoning, cook for 2 minutes then add chopped onion. Cook onion until they turn light brown.

Step 3 – Now add spices –  salt, turmeric, red chili powder, cumin powder, coriander powder, fennel seeds powder and dry mango powder. Toss or mix all spices with karela and cook for 5-7 minutes on low heat. Do not cover while cooking and keep on string it in every 1 minute

Step 4 – After 7-8 minutes, check if Karla’s are cooked.  This time garnish with fresh coriander leaves and close the gas. Karela fry is ready.

Tadka Raita:

Step 1 – Take 2 cups curd and whisk it then add 1/2 cup boondi. Mix well then add white and black salt and mix again. Now for Tadka, take a pan and add 1/2 tsp oil (very little oil), when oil is hot add 1/2 tsp mustard seeds. When seeds started to crack, close gas and add pinch of red chili powder and immediately add this tadka to raita.

Note: You can wash karela with salt water after chopping it. Salt will remove extra bitterness from Karla’s (Bitter gourd).
