Chole Masala / छोले मसाला / Punjabi style Chole Recipe / पंजाबी स्टाइल छोले रेसिपी

Chole masala is very famous in north India. You can savor with Puri, Bhatura and Rice. This is  one of my childhood favorite, which used to be prepared by my mother on special occasions. And me and my siblings loved every bite of it. I have learned this recipe from my mother and her love for making healthy and delicious food always amaze me.

About the Recipe

Ingredients

  • 1 cup chole, 2 bay leaf, 4-5 whole black pepper, 2 green cardamom
  • 2 black cardamom, 1 star anise, 1/2 tsp carom seeds, 1/2 tsp cumin seeds
  • 1 onion, 1 tomato chopped, 4 tomatoes for puree
  • 1 inch ginger and 5 gloves garlic for making paste
  • 1/2 tsp turmeric powder, 1/2 tsp red chili powder, 
  • 1/2 tsp cumin powder, 2 tsp coriander powder, 3 tsp chole masala
  • 1/2 tsp dry mango powder
  • 3 tbsp oil & fresh coriander and ginger juliennes for garnishing
  • 3 cups water
  • 1/2 tsp black tea
  • For Final Tadka – 2 tbsp ghee and pinch of Hing

Stepwise Directions

Step 1- Rinse chole with fresh water and soak it over night or for 6-7 hours. Cut onion, cut tomato, make tomato puree of 4 tomatoes and also prepare ginger garlic paste.

Step 2 – Transfer soaked chole in pressure cooker and add 2 cups water and 1 tsp salt. Now in one cup water add 1/2 tsp black tea and let it boil till it leaves nice color. Now strain this water and add in pressure cooker. Close the lid and pressure cook for 5-6 whistles on low to medium heat on until Chole’s are soft

Step 3 -Once Chole is boiled, separate Chole and water. Do not discard Chole water, keep aside. Take a pan and add 3 tbsp cooking oil, add all whole spices (bay leaf, black pepper, star anise, green cardamom, black cardamom) and cook for few seconds then add carom seeds and cumin seeds. Once seeds start cracking add 1 chopped onion and cook for 1-2 minutes on low to medium heat. Now add 2 tbsp ginger & garlic paste and cook for another 1-2 minutes then add all dry spices (Chole masala, cumin seeds powder, coriander powder, turmeric powder, dry mango powder) cook them for 1-2 minutes on low heat. 

Step 4 – Add 1 chopped tomato and cook for few seconds then add 1 cup tomato puree and add 1/2 tsp red chili powder. Cook all these spices and tomato puree until oil separates. Then add Chole without water. Cook Chole for 5-7 minutes on medium heat with all spices and then add water (same water which we kept aside) slowly. You can add water as per your desire consistency. Then cover the lid and let it simmer for 15 minutes. If they become too thick you can add more water.

Step 5 – Check after 15 minutes, oil must have released, check final seasoning and add fresh chopped coriander leaves and keep aside.

Step 6 – Take a pan and add 2 tbsp ghee, when ghee is hot add pinch of hing and add this tadka to Chole. Garnish Chole with fresh coriander leaves and ginger juliennes and serve hot.

Note: Carom seeds and hing help in digestion of Chole. Please try to add both in this recipe.
