About the Recipe

Ingredients

  • 1 cup vermicelli roasted
  • 1 tomato
  • 1 small potato, 1/2 cup frozen peas
  • 1 onion, fresh coriander leaves, 1 tsp fresh lemon juice
  • 1/2 tsp mustard seeds, 4-5 fresh curry leaves
  • 1 & 1/2 cup water
  • 1/2 tsp turmeric powder, pinch of red chili powder or add as per your taste
  • 1/2 tsp salt or as per your taste
  • 2 tbsp oil, 1 tbsp ghee

Stepwise Directions

Step 1- Chop tomato and onion. Cut potato in small pieces, chop fresh coriander leaves. If Vermicelli is not roasted then dry roast it in a pan.

Step 2 – Take a deep pan and add 2 tbsp oil. When oil is hot, add mustard seeds and curry leaves. When seeds start cracking add chopped potatoes. Cook potatoes until half done, then add chopped onion and cook for 1-2 minutes on medium heat. Then add chopped tomatoes and spices like- 1/2 tsp turmeric powder, very little chili powder (Vermicelli doesn’t take much chili, so add accordingly) and salt as per your taste or as stated in ingredients.

Step 3 – After cooking 1-2 minutes it’s time to add 1 cup roasted vermicelli. Mix is well then add 1 & 1/2 half cup water. Or other way of seeing it that water should cover all vermicelli and veggies. Now add 1 tbsp ghee and mix well. Wait till start boiling, now cover the pan lid and let it cook for 10 minutes on low heat.

Step 4 – After 10 minutes, water must have been absorbed by vermicelli, add fresh chopped coriander and lemon juice. Mix everything well then cover the lid and again cook for 2 minutes on low heat. After 2 minutes, check and serve hot.

Note: How to check spice level- After adding water, stir is nicely then taste water for salt and chili. If water it nice salty then no need to add anything.
