Rakshabandhan Special Dessert : Sevai Kheer / रक्षाबंधन विशेष मिठाई: सेवई खीर / Seviyen / सेवियें

This is Rakshabandhan special dessert. I have been seen my mother making Sevai Kheer on Rakhabandhan and she make sure that everyone of us taste it. This is one of the tradition at most of the places. This is easy to make than rice kheer and taste delicious. The most simple Seviyan can be prepared only in 15 minutes.

About the Recipe

This is one of the tradition at most of the places. This is easy to make than rice kheer and taste delicious. The most simple Seviyan can be prepared only in 15 minutes.

Ingredients

  • 750 ml milk
  • 1/2 cup roasted vermicelli (Sevai)
  • 1/4 cup sugar
  • 1 tbsp chopped Cashew
  • 1 tbsp chopped almods
  • 1 tsp grated dry coconut (optional)
  • 2 tsp ghee
  • Pistachio for garnishing

Stepwise Directions

Step 1- Take a deep pan and add 750 ml milk. Stir continually to avoid sticking at the bottom. Wait till the milk start boiling then add 1/2 cup roasted vermicelli and keep on string it. Keep the heat low to medium. After 2-3 minutes stop string and simmer for 5-7 minutes.

Step 2 – Take one more pan and add 2 tsp ghee, when ghee is hot add chopped cashew and almonds. Roast them for 1-2 minutes on low heat. Then add 1 tsp grated dry coconut and roast for another 15-20 seconds. Now add these roasted nuts to kheer.

Step 3 – After adding nuts to kheer, mix well everything then add 1/4 cup sugar. Keep on string for 1-2 minutes and then simmer for another 10 minutes.

Step 4 –  Transfer into serving bowl and garnish with pistachio.
