Chutney’s:Khajoor+Imli & Dhaniya+ Pudina (Dates & Tamarind, Mint & Coriander) Chutney’s for Dahi Bhalla

Khajoor chutney (Dates+Tamarind) is widely use in most of the spicy street food in India, and so the Dhaniya+Pudina (Mint+Coriander) chutney. And both need while making Dahi-Bhalle chaat, which is one of the yummiest yogurt street food. And it cannot be enjoyed without chutney’s. I was preparing Dahi-Bhalle for dinner, that’s why I had prepared both the chutney’s. In Tamarind Chutney, I had added Dates. The Chutney become more healthy and tasty with dates.

Chutney’s: Dates-Tamarind & Mint-Coriander

I was preparing Dahi-Bhalle for dinner, that’s why I had prepared both the chutney’s. In Tamarind Chutney, I had added Dates. The Chutney become more healthy and tasty with dates.

Ingredients

DATES-TAMARIND CHUTNEY

  • 1 cup dates, 1/4 cup tamarind
  • 2 cups hot water
  • 1/4 cup jaggery or sugar
  • 1/2 tsp garam masala, 1/2 tsp red chili powder, 1/4 tsp black salt, white salt as per taste
  • 1/4 tsp roasted cumin crushed

MINT-CORIANDER CHUTNEY

  • Handful of coriander leaves, 15-20 mint leaves
  • 1 inch ginger, 1 garlic clove, 1 tsp fresh lemon juice, pinch of hing
  • 1/4 tsp black pepper powder, 1/4 tsp cumin seeds, black and white salt as per taste
  • 1 tbsp water

Stepwise Directions

Step 1- Soak both dates and tamarind in hot water for 15 minutes. After 15 minutes crush the tamarind to takeout pulp and strain it. Grind Dates in mixer grinder. Now add both dates paste and tamarind pulp in pan and add jaggery or sugar (Jaggery is more healthy than sugar). Add spices like- garam masala, red chili powder, black and white salt and roasted crushed cumin. Mix and let it simmer for 5 minutes.

Step 2 – In the mean time let’s prepare mint-coriander chutney. First everything wash with clean water. Cut ginger in small pieces and add coriander, mint, ginger and garlic to mixer jar. Also add fresh lemon juice, black pepper powder, cumin seeds, pinch of hing, black and white salt. Also add 1 tbsp water and then grind to make smooth chutney. Keep it aside in Refrigerator.

Step 3 – Back to Dates and Tamarind chutney- after 5 minutes the color must have started to change, check the smoothness. If not very smooth and blend it again and strain. After straining it, add again to pan and check seasoning. Add if required any. Then cook for another 5 minutes or till the desire consistency on low heat. Switch off the gas and let it cool down completely before you transfer it to box or jar.

Note –  Date-tamarind chutney can be stored in Fridge for one month. And mint and coriander chutney can be store in fridge for one week.
