Soft and spongy dahi bhalla recipe / Try my recipe for very soft dahi ball

Dahi Bhalla is a complete meal and one of the famous street food in India. Making it at home is little long process but result is awesome and home made food is always healthy and amazing. I mostly prepare Dahi Bhalla on festivals like – Holi and Diwali.

About the Recipe

Dahi Bhalla is a complete meal and one of the famous street food in India. Making it at home is little long process but result is awesome and home made food is always healthy and amazing. I mostly prepare Dahi Bhalla on festivals like – Holi and Diwali. 

Ingredients

  • 1 1/2 cup udad dal
  • 1/2 tsp salt and 1/2 tsp hing
  • 2 tbsp curd for making butter milk
  • Oil for frying
  • 4 cup fresh curd, tamarind chutney, mint+coriander chutney (check my other videos for chutney’s)
  • Salt, chili powder, roasted cumin seeds powder for seasoning

Stepwise Directions

Step 1- Wash udad dal for 3-4 times then soak it for 4-5 hours. After 5 hours grind to make smooth batter. Do not use too much water while making Balla batter. Do not mix or touch the batter after grinding it. It will rise it’s own. Leave it for 15 minutes.

Step 2 – After 15 minutes, add 1/2 tsp salt and 1/2 tsp hing in batter and mix with spoon. You can beat the batter for 1 minute or so. The batter can be checked in water for it’s consistency. For checking in water: take small bowl water and add a drop of batter into water, if batter floats in water that’s mean batter is perfect. Keep batter aside.

Step 3 – Take 2 cups water and add hing. Heat the water and keep it aside for soaking fried bhalla’s. Also prepare butter milk. Take 2 tbsp curd and add 2 cups water. Mix well and keep it aside for later soaking.

Step 4 – Heat oil in deep pan on medium heat. Add small balls into hot oil and do not touch for a minute or so. After 1 minute keep rotating balls to make them round and fry them on low to medium heat for 3-4 minutes or fry them until they are light brown. Take out in a plate and fry all with same process. Add bhalla balls to hot water and soak it for 30 minutes. After 30 minutes squeeze maximum water from bhalla and add it to butter milk and soak it for another 15 minutes.

Step 5 – squeeze butter milk from bhalla and add it to serving bowl (7-8 pieces), add lots of cold beaten curd and tamarind chutney, mint-coriander chutney. Add some seasoning like salt, red chili powder, roasted cumin powder. Enjoy Dahi Bhalla’s.

Note –  Do not soak all bhalla’s in water, only soak how much you are going to consume. Rest keep in refrigerator.
