Dry Fruit Barfi on Janmashtami / Enjoy in fast / Sweets Recipe / Dessert

I have prepared Dry Fruit barfi for Janmashtami. I have been eating this since my childhood on Janmashtami, it is like one of the traditional sweet on Janmashtami. We can also eat this barfi in Janmashtami fast. It can also be enjoyed during Navratri fast. It has lots of calories and it keeps you full for long time due to lots of protein in dry fruit.

About the Recipe

I have prepared Dry Fruit barfi for Janmashtami. I have been eating this since my childhood on Janmashtami, it is like one of the traditional sweet on Janmashtami. We can also eat this barfi in Janmashtami fast.  It can also be enjoyed during Navratri fast. It has lots of calories and it keeps you full for long time due to lots of protein in dry fruit.

Ingredients

  • 50 grams fox nuts, 70 grams walnuts, 100 grams cashews, 110 grams almonds
  • 2 tbsp melon seeds, 1 tsp dry ginger powder, 1 tbsp cumin seeds
  • 1 1/2 cup sugar, 3/4 cup water
  • Ghee for roasting few dry fruits, for sugar syrup and greasing

Stepwise Directions

Step 1- Take a pan and dry roast almonds, walnuts,  cashew separately on low heat. Then add 1 tbsp ghee and add fox nuts, roast them until they are crunchy. Then add little more ghee and add melon seeds. Roast them for only 10-15 seconds as pan is already hot. In last grind cumin seeds and then add to pan along with dry ginger powder. Roast only for few second. Keep everything aside to Cool completely.

Step 2 – Lets prepare sugar syrup, add 1 1/2 cup sugar to the clean pan and add 3/4 cup water. Stir continuously until sugar dissolve completely. Now let the sugar syrup cook on low heat, first grease the tray for setting up barfi and then grind all dry fruit except melon seeds. Do not make powder, just grind a little. Add it all to the  bowl, also add melon seeds and cumin and ginger powder, mix well.

Step 3 – Back to sugar syrup, add 1 tbsp ghee for better taste. Then check if you have one fine thread while dripping syrup. That’s mean sugar syrup is ready. Now do not add all the dry fruit mix, first add 3/4th and mix and check if syrup is still too thin, then add rest of it and cook until mixture starts to leave pan. OR you check with water. Drop a small amount of mixture in bowl of water, if it does not separate, that’s mean mixture is ready.  

Step 4 – Transfer mixture to greased tray, shape it in square, garnish with chopped pistachio. After 30 minutes mark with knife for small shape and then let it cool completely. Then cut it out and enjoy.
