Dhaba Style Aloo ki sabji and puri / Restaurant style Aloo-puri- A must try recipe

This recipe is also known as Aloo-Puri and this is very famous in north India and most parts of UP state. This is one of the breakfast recipe which is being served by some famous sweet joints/shops. I have prepared aloo ki sabji with same flavors we get from those famous joints. Follow my step by step recipe and enjoy a very famous Aloo-Puri at comfort of your home.

About the Recipe

This recipe is also known as Aloo-Puri and this is very famous in north India and most parts of UP state. This is one of the breakfast recipe which is being served by some famous sweet joints/shops. I have prepared aloo ki sabji with same flavors we get from those famous joints. Follow my step by step recipe and enjoy a very famous Aloo-Puri at comfort of your home. 

Ingredients

  • 2 medium size potatoes (boiled), 1 tomato chopped, 1 cup tomato puree
  • 1 tsp cumin seeds, pinch of hing, 1/2 tsp turmeric powder, 1 tsp red chili powder
  • 1 tsp coriander powder, salt for sabji and for dough, 1 tsp Kasuri Methi
  • 1 1/2 cup water, chopped fresh coriander leaves, 1 tbsp chopped ginger
  • 1 1/2 cup wheat flour , 1/2 cup water
  • 1 tbsp oil for sabji
  • Oil for frying

Stepwise Directions

Aloo is Sabji

Step 1- Chop ginger and tomato and make puree of tomatoes. Also cut fresh coriander leave.

Step 2 – Take a pan and add 1 tbsp oil, when oil is hot add cumin seeds and hing. sauté then add chopped ginger and sauté again. Add chopped tomato and spices like- turmeric, red chili powder and coriander powder. Saute for 30 seconds then add fresh tomato puree and cook until oil separates. Break boiled potatoes with hands into small pieces. When oil started to separates, add potatoes and mix. Then add 1 1/2 cup water and also add 1/2 tsp salt or as per your taste. Then simmer for 10 minutes. Aloo ki sarji is ready keep aside. 

Puri

Step 1 – Take a big bowl or plate and add 1 1/2 cup wheat flour then add salt and 1 tbsp oil. Mix all everything then add water slowly and combine the flour. Then Knead hard smooth dough. When dough is ready keep aside for resting for 15 minutes. 

Step 2 – After 15 minutes, take almost half portion of dough and knead again and cut out into small pieces. Then take one small piece and roll between your palms. Make it cracks free dough ball. Make all with same process. Grease all dough balls with oil, it will prevent from drying the dough balls. Now take one and keep it on working space and start rolling it with rolling pin. Roll gently and turn after every roll and make it thin and even from all sdies. Around size of 4 inch. Roll all Puries with same process. 

Step 3 – Take a deep pan and add oil for frying. When oil is hot add one puri and press gently with help of spatula, turn upside down when puri is puffed. Cook golden brown from both the sides and then take it out in a plate. Fry all puris and serve hot Aloo ki sabji and Puri.
