Baingan Ka Bharta Recipe / Try my style of Baingan Ka bharta / Eggplant recipe

Baingan ka Bharta is an amazing dish. It can be cooked with different styles, it can be roasted or boiled. Both style gives different flavors. Few years back only I have learnt his recipe and wanted to share my style/ delicious Baingan Bharta ka bharta.

About the Recipe

Baingan ka Bharta is an amazing dish. It can be cooked with different styles, it can be roasted or boiled. Both style gives different flavors. Few years back only I have learnt his recipe and wanted to share my style/ delicious Baingan Bharta ka bharta.

Ingredients

  • 400 grams eggplant, 1 tomato chopped, 1 whole dry red chili
  • 1 tsp cumin seeds, pinch of hing, 1/2 tsp turmeric powder, 1 tsp red chili powder
  • 1 tsp coriander powder, 1/2 tsp salt or as per taste
  • 1 tbsp ginger garlic paste, chopped fresh coriander leaves, 1 tsp fresh lemon juice
  • 1 tbsp oil

Stepwise Directions

Step 1- Cut eggplant half to check worms. 1 big size eggplant can be cut into 4 pieces. Chop tomatoes, make ginger garlic paste and also chop fresh coriander leaves. 

Step 2 – Take a deep pan with 1/2 filled with water. Add eggplant into that pan and let it boil for 10 minutes on medium heat. Once eggplant become soft, close the gas and take it out in a plate. Leave it in plate for eggplants to cool down. 

Step 3 – Take a Pan and add 1 tbsp oil. When oil is hot add 1 whole red chili and cumin seeds. Saute and then add 1 chopped onion and sauté for 1-2 minute. Then add ginger garlic paste. Saute until raw smell is gone then add 1 cup chopped tomatoes. Mix and add spices like- Red chili powder, Coriander powder, turmeric powder and salt as per taste. Now cook this spice mix for 8 to 10 minutes or until oil start to separate. 

Step 4 – Mean time peel boiled eggplant skin and then cut/smash them with spoon or fork. And when gravy is ready add mashed eggplant to it and mix everything well. Cover the lid and cook for minimum 10 minutes on low heat. (If pan is not non-stick then stir in between). After 10 minutes mix again and add handful of fresh chopped coriander leaves and 1 tsp fresh lemon juice. Mix and cook 1 more minute then close the gas. Baingan Ka Bharta is ready, serve hot with Paratha/Roti/Rice.
