MOOLI KA PARATHA / BREAKFAST RECIPE – PARATHA RECIPE / RADISH RECIPE


Radish is a winter vegetable. And it can be enjoyed mainly in salads and as a filling of paratha. Which is everyone’s favorite in winter. Hot Mooli paratha with hot tea in winter morning. Making mooli ka paratha is not easy as Radish has lots of water and filling radish in dough ball is not easy. Follow my recipe for perfect Mooli Ka Paratha.

Ingredients

  • 2 medium size radish
  • 1 onion, 1 inch ginger, 1 tsp carom seeds
  • 1/2 tsp garam masala, 1/2 tsp black pepper powder
  • 1/2 tsp salt, 1 tsp coriander powder, pinch of turmeric
  • Fresh coriander leaves
  • Pre-prepared dough (follow my Aloo ka Paratha video for Dough recipe)
  • 1 tsp oil 
  • Oil for making paratha’s

Stepwise Directions

Step 1- Peel and grate radish and chop onion and ginger. Then transfer grated radish to clean kitchen towel and squeeze out all the water from radish. Keep aside grated radish.

Step 2 – Take a pan and add 1 tsp oil. When oil is hot add 1 tsp carom seeds and sauté, then add chopped ginger and sauté. Now add grated radish, chopped onion and spices like – garam masala, black pepper powder, coriander powder, pinch of turmeric powder and salt as per your taste. Saute all of it for 1-2 minutes first then add chopped fresh coriander leaves, mix and sauté again for 1 minute. Close the gas and transfer radish filling to the bowl and let it cool down completely. 

Step 3 -Take one small size dough and roll between hands. Then dust with dry flour and put on rolling surface. Roll it with rolling pin about 2.5 inch then add radish filling about 2 tbsp (of less). Now close it with hands properly. Make sure no cracks or filling coming out.  Dust with dry flour again and gently press with hands then start rolling from sides first. Later roll from center. Dust flour whenever is needed.

Step 4 –  Keep a flat pan on medium heat, when pan is hot grease it with oil and put paratha on it and let it cook for 1-2 minutes. Then flip paratha upside down and apply oil. Now flip paratha to other side and apply oil. Cook from both the side on low to medium heat until golden brown and crisp. Do not try to cook on high heat. Make all the paratha’s with same process. 

Note: Serve hot with curd or tea or pickle.
