CLUB SANDWICH WITH STIR FRIED ZUCCHINI / SAUCE ZUCCHINI WITH GARLIC AND OLIVE OIL / SANDWICH RECIPE

This is my one of favorite breakfast platter. It is a combination of vegetables, some carbs, lots of protein and off course it is very healthy. Stir fried zucchini with garlic and olive oil has amazing flavors. Also, it keeps me full for long time. You can make some changes if you don’t like egg or if you want to add ham or any other veggie of your choice.

About the Recipe

Stir fried zucchini with garlic and olive oil has amazing flavors. Also, it keeps me full for long time. You can make some changes if you don’t like egg or if you want to add ham or any other veggie of your choice.

Ingredients

  • 1 zucchini, 3 garlic cloves chopped, 1/2 tsp rock salt, 1/4 tsp black pepper powder
  • 4 sandwich breads, 1 cucumber, 1 onion, 1 tomato
  • Fresh lettuce (romaine lettuce)
  • 1/4 cup mayonnaise, pinch of black pepper powder, 1/4 tsp salt
  • Cheese slice -1
  • 2 eggs, pinch of salt 1 tsp olive oil

Stepwise Directions

Step 1- Cut zucchini in circles and chop 3 garlic clove. Take a non-stick pan and add 2 tsp olive oil when oil is hot add chopped garlic. Saute for 10 seconds then add zucchini circles. Sprinkle rock salt and black pepper powder. Cook them on low heat to medium heat until caramelized from both the sides. When done, take it out and keep aside.

Step 2 – Take 4 breads and remove brown part from sides. Then cut them into triangle shape. Take a pan and dry roast them from both the side. Do no over roast. Keep aside when all done.

Step 3 -To make mayonnaise dip, add 1/4 cup mayonnaise in a mixing bowl and add pinch of black pepper powder and 1/4 tsp salt. Mix all nicely and Keep aside. 

Step 4 –  Take 2 eggs and crack them in a bowl. Add pinch of salt and mix with fork. Then heat a pan and add 1 tsp olive oil. Spread oil on pan and add egg mix. Cook on low heat. Do not let eggs omelette change color to brown. Try to keep it yellow. Cook from both side on low heat and when done keep aside.

Step 5 –  Cut cucumber, onion and tomato in thin circles. Now we will assemble the club sandwich. Take roasted breads and apply mayonnaise dip on all breads with butter knife. Then cut cheese slice into triangle and place on 2 breads. On top of cheese slice put cucumber, tomato and onion. Then cut omelette in triangle and place over veggies. Finally add lettuce and close this sandwich with another bread on top. Press gently and lock it with toothpick. Club sandwich is ready. Enjoy with ketchup

Note: You can remove egg if you do not eat. And you also add ham if you eat that.
