RAJMA MASALA RECIPE / PUNJABI RAJAMA/ KIDNEY BEANS

Rajma masala is very famous in north India. This recipe also known as Punjabi Rajma Masala. And every Punjabi loves Rajma Masala. It is slow cooked spices recipe, you needs to cook onion and ginger garlic paste on slow heat only to get amazing flavors. Rajma’s best companion is Rice, but it can also be enjoyed with Indian Breads.

Rajma’s best companion is Rice, but it can also be enjoyed with Indian Breads.

Ingredients

  • 1 cup Kidney Beans, 2-3 bay leaf, 5-6 whole black pepper,
  • 2 black cardamom, 1 tsp cumin seeds
  • 1 onion, 4 tomatoes for puree
  • 2 tbsp Ginger garlic paste
  • 1/4 tsp turmeric powder, 1/4 tsp red chili powder, 
  • 1 1/2 tsp coriander powder, 3 tsp Rajma masala (any brand)
  • 3 tbsp oil & fresh coriander leaves 
  • 3 cups water

Stepwise Directions

Step 1- Rinse Kidney Beans with fresh water and soak it over night or for 5-6 hours. Cut onion, make tomato puree of 4 tomatoes and also prepare ginger garlic paste.

Step 2 – Transfer soaked Kidney Beans in pressure cooker and add 3 cups water and 1 tsp salt. Close the lid and pressure cook for 5-6 whistles on low to medium heat on until Kidney Beans are soft.

Step 3 -Once Kidney beans boiled, keep aside. Take a pan and add 3 tbsp cooking oil, add all whole spices (bay leaf, black pepper, black cardamom) and cook for few seconds then add cumin seeds. Once seeds start cracking add 1 chopped onion and cook for 1-2 minutes on low to medium heat. Now add 2 tbsp ginger & garlic paste and cook for another 1-2 minutes. 

Step 4 – Add 1 cup tomato puree and add spices like- turmeric powder, coriander powder, rajma masala, red chili powder. Cook all these spices and tomato puree until oil separates. Then add boiled Kidney Beans (do not add all the water at once, check the consistency and add more water when required) mix everything, let curry started to boil. Then cover the lid and let it simmer for 10 minutes.

Step 5 – Check after 10 minutes, oil must have released from sides, check final seasoning and add fresh chopped coriander leaves and mix. Rajma Masala is ready. Enjoy hot with Rice.
