BUTTER PANEER MASALA/ COTTAGE CHEESE IN RICH AND CREAMY GRAVY / PANEER BUTTER MASALA

This one you can prepare for get-togethers and parties, as it’s need little extra efforts. But all the efforts paid off with one bite of rich and creamy Butter Paneer Masala.

Ingredients

  • 1 big onion, 4 tomatoes, 2 garlic cloves, 1/2 inch ginger 
  • 8-9 whole black pepper, 1 cinnamon stick
  • 2 green cardamom, 1 tsp cumin seeds, 2 tbsp cashews, 1 1/2 tbsp melon seeds
  • 400 grams paneer, 1 tbsp peanuts, 1 tbsp fresh cream
  • Pinch of turmeric powder, 1 tsp Kashmiri red chili powder, 
  • Salt – 1 tsp, 1 tsp oil & 1 tbsp butter (unsalted)
  • 1 tbsp oil & fresh coriander leaves 
  • 1 cups water

Stepwise Directions

Step 1- Take a deep pan and add 1 tbsp oil. When oil is hot, start adding whole spices- green cardamom, cinnamon stick, whole black pepper and cumin seeds. Then add 1 big size of roughly chopped onion, garlic cloves, ginger piece and sauté for a minute. Then add cashews and sauté again for a minute. Then add 4 roughly chopped tomatoes, mix and add salt. Also add melon seeds and peanuts. Mix everything well and add 1 cup water. Cover the lid and simmer for 6-8 minutes. After 6-8 minutes, close the gas and let it cool down completely.

Step 2 – Transfer this boiled mixture to grinding jar and grind to make smooth paste. Once paste is ready, strain it with strainer for any tomato skin or cardamom skin. We need smooth and creamy gravy. (Do not use too much water while making paste)

Step 3 -Take a non-stick pan and add 1 tsp oil and 1 tbsp unsalted butter. Let the butter melt on low heat. Then add 1 tsp Kashmiri red chili powder and pinch of turmeric. Mix and immediately add onion, tomato, cashews mix. Now cook this mixture on low to medium heat until oil separates. This will take 9-10 minutes. Then add 1/2 cup water. (I have used here same water which I used boiling tomato onion and other stuff). Mix and cook for 1-2 minutes then add paneer. (Cut paneer to your desired size and shape). Cook with paneer for 2-3 minutes. 

Step 4 – After 2-3 minutes add 1 tbsp fresh cream and cook another minute or so. Check seasoning and add salt if required at this stage. Now the gravy must have release oil on side. This means Butter Paneer Masala is ready. Garnish with fresh chopped coriander leaves and serve hot with Butter Naan or Paratha.
