MAKHANE KI SABZI AND KUTTU KI PURI ~ मखाने की सब्जी और कुट्टू की पुरी / NAVRATRI RECIPES/FASTINGFOOD

We always look different ways of making Vrat ka Khana. I am sharing my recipe of Makhana Ki Sabzi and Kuttu Ki Puri. This is an amazing combination. I have also added green chili and fresh coriander leaves. If you do not eat any of those things, you can remove from your recipe.

About the Recipe

We always look different ways of making Vrat ka Khana. I am sharing my recipe of Makhana Ki Sabzi and Kuttu Ki Puri. This is an amazing combination.  I have also added green chili and fresh coriander leaves. If you do not eat any of those things, you can remove from your recipe.

Ingredients

  • 1/2 cup fox (Makhana) nuts, 4 boiled Potatoes: medium size
  • 3 green chili, 1 1/2 inch ginger
  • Fresh coriander leaves, 10-12 cashews
  • 1 tsp black pepper powder, 1 tsp sendha namak (pink salt)
  • 2 1/2 tbsp ghee (clarified butter)
  • Oil for frying

Stepwise Directions

Step 1- Take a non-stick pan and add 2 tbsp ghee (clarified butter). When ghee is medium hot add fox nuts and roast them for 2-3 minutes. Once done, take it out. Add 2 green chili and 1 inch ginger in mixer jar, also add 10-12 soaked cashews (soak cashew in hot water for 15 minutes) and 4 tomatoes roughly chopped. Grind to make smooth paste. Also break 2 boiled potatoes into small pieces with hands. 

Step 2 – Take a same pan in which you have roasted fox nuts. Add 1/2 tbsp ghee, and add tomato paste. Mix and add 1/2 tsp black pepper powder and 1/2 tsp sendha namak (pink salt). Cook for 2-3 minutes or until oil separates. Then add roasted fox nuts and broken boiled potatoes. Mix and add 1 cup water. Mix again and cover the lid, simmer for 3-4 minutes. After 4 minutes add chopped coriander leaves and close the gas. Makhana sabzi is Ready.

Step 3 – For Kuttu Ki Puri – take 1 cup buckwheat flour (sift the flour) and add 1 chopped green chili and 1/2 inch chopped ginger. Also add 1/2 tsp black pepper powder, 1/2 tsp sendha namak and crushed boiled potatoes. Mix all with buckwheat flour to form a dough. Add water when required very slowly. Make a hard dough. 

Step 4 – Take a deep pan and add oil for frying. Also prepare one plastic open like a book. I have used zip bag and I had cut from 3 sides and 1 side is closed. Now open your plastic wide. And apply some oil on plastic both sides and on your hands. Then take it out small ball size dough and make it smooth then place it on greased plastic. Then close the plastic as book. And start pressing on top with your hand. We need to make thin round or oval shape puri. As it is inside greased plastic so it will be easy to spread. Once done, open plastic and take it out and add in medium hot oil.

Step 5 – let it cook on medium heat until puri is crispy. Make all puri’s with same process and fry all puri’s with same process. Enjoy Makhana ki sabzi and Puri.
