KADHI PAKORA RECIPE ~ कढ़ी पकोड़ा रेसिपी / PUNJABI KADHI

Kadhi Pakora is one of the famous recipe in North India, which also known as Punjabi Kadhi. There are many versions of making Kadhi Pakora. I will be following my Mother’s recipe with little twists.

ABOUT THE RECIPE 

Kadhi Pakora is one of the famous recipe in North India, which also known as Punjabi Kadhi. There are many versions of making Kadhi Pakora. I will be following my Mother’s recipe with little twists. 

INGREDIENTS

FOR KADHI:

  • 4 cups Yogurt (curd), 1/2 cup gram flour
  • 1 onion medium size, 8-9 Garlic cloves, 1 inch ginger
  • 1 tsp fenugreek seeds, 1/2 tsp cumin seeds, 1/4 tsp mustard seeds
  • 2 dry whole red chili, 1 tsp Salt, fresh coriander leaves
  • 2 tsp coriander powder, 1 tsp turmeric powder, 1 tsp red chili powder
  • 3 tbsp oil, 4 cup water

FOR PAKORI’S

  • 1 cup gram flour
  • 1/2 tsp red chili powder, Pinch of turmeric
  • 1/2 tsp coriander powder, 1/2 tsp salt, 1/4 tsp Asafoetida 
  • 1/2 cup water, oil for frying

DIRECTION

STEP-1:  Take a big mixing bowl and add 4 cups yogurt. Whisk the yogurt. Then add 1/2 cup gram flour and whisk again to make lump free batter. Then add 4 cups water and mix. Keep this mixture aside. For more preparations, chop onion, ginger and garlic. 

STEP -2: For making pakora’s- add 1 cup gram flour in a mixing bowl and add 1/2 tsp red chili powder, pinch of turmeric, 1/2 tsp coriander powder, 1/2 tsp salt and pinch of asafoetida. Then mix all together and start adding water gradually. We need to prepare smooth batter. Beat the batter for 3-4 minutes to make it fluffy. Heat oil for frying to medium hot. Then start adding small-small size of pakora, keep the heat on low at the time of adding pakora’s. Rotate them and cook for 1-2 minutes on medium heat. Once done, take it out and keep aside.

STEP -3: Take a small bowl and add 2 tsp coriander powder, 1 tsp turmeric powder, 1 tsp red chili powder. Also add 1/2 cup water and make a paste. Keep aside this paste.

STEP -4: Take big deep pan and add 3 tbsp oil. When oil is hot, add 1 tsp fenugreek seeds, 1/2 tsp cumin seeds, 1/4 tsp mustard seeds. Also add 2 dry whole red chili, saute for 1 minute. Then add chopped onion and cook for 1-2 minutes. Then add chopped ginger & garlic, cook them on low to medium heat until golden brown. Once they are brown, add spice mix which we prepared earlier. Then turn the heat low. Now add yogurt and gram flour mix and start stirring. Turn heat to high and do not stop stirring else yogurt may curdle.

STEP -5: Cook on high heat until started to boil. It will take 6-7 minutes. Once started to boil, add 1 tsp salt (or as per your taste), mix and simmer for 10 minutes. After 10 minutes add fried pakora’s and chopped fresh coriander leaves. Mix and cook for 2 more minutes. Kadhi is ready, enjoy with Rice/Roti/Paratha.

NOTE: Take sour yogurt for making kadhi. And do not add water once kadhi started to boil.
