MATHURA KE PEDE ~ मथुरा के पेड़े/ INSTANT MAWA RECIPE / PEDE RECIPE

This is one the famous India sweet, and also famous by a city called Mathura. The authentic process is to make Pede (sweet balls) is to cook milk until it become thick paste, then add sugar and give a shape of small balls. But in this recipe, we will be making instant mawa (thick milk paste) and then we will enjoy the same texture and taste.

ABOUT THE RECIPE 

This is one the famous India sweet, and also famous by a city called Mathura. The authentic process is to make Pede (sweet balls) is to cook milk until it become thick paste, then add sugar and give a shape of small balls. But in this recipe, we will be making instant mawa (thick milk paste) and then we will enjoy the same texture and taste.

INGREDIENTS

  • 2 cups milk powder
  • 1 cup heavy cream
  • 1/2 cup caster sugar
  • 1/2 cup normal small size sugar
  • 1/2 tsp green cardamom powder

DIRECTION

STEP-1:  Take a microwave safe bowl and add 2 cups milk powder. Then add cream slowly and mix. Do not add all cream at once. Mix and make sure no dry milk powder left. Then put it in microwave for 1 minute. Take it out after 1 minute and mix a bit. Then repeat the process again for 1 minute, take it out and mix a bit. Again put in microwave for 1 minute and take out and mix. And by this time mixture must have become 80% dry. Now put in microwave for 30 seconds. Take it out after 30 seconds and mix a bit. We need to put for final 30 seconds in microwave. After 30 seconds the mixture should have become dry and released little butter and no more sticky. Mawa ( milk paste) is ready. Leave it for 2-3 minutes.

STEP -2: Transfer milk paste to big mixing bowl and let it cool down completely. We also need green cardamom powder. So if you do not have then you can make it by crushing whole green cardamom. 

STEP -3:  Back to milk paste, break all the lumps with hand before adding sugar (Do not add sugar if milk paste is hot or warm). Add 1/2 cup caster sugar and 1/2 cup normal small size sugar (small size sugar will give sweet balls a good crunch). Also add 1/2 tsp green cardamom powder. Mix well everything with hands. Then take small size of mixture in your hand and start forming a shape. Press and rotate, follow this until you have round or square smooth shape. You can also give thumb mark in middle as authentic ‘Pede’ (sweet ball). Make all with same process.  Place them in airtight container and keep it in refrigerator. You can store unto 15 days in refrigerator.
